1 tsp minced ginger
200 g minced meat
1,000 ml of water
2 tsp instant powdered fish stock ( dashi )
1 tsp sugar
2 tsp Japanese soy sauce ( shoyu )
2.5 tbsp miso
1 tsp sesame oil
75 g bean sprouts
100 g cabbage , finely shredded
50 g carrots , sliced into matchsticks
Water to boil
300 g fresh ramen ( chukamen )
2 stalks chives , thinly 1cm
1 ½ boiled egg cooked as a supplementary
How to make
Heat oil in a pan / skillet over medium heat . Stir-fry garlic and ginger until fragrant . Add mince , stirring until meat changes color and mature .
Pour water into the pan , put the fish broth , sugar and soy sauce japanese , stir and cook until boiling .
Reduce the heat , add the miso , stirring until miso dissolves . Add sesame oil , bean sprouts , cabbage and carrots to the pan / wok , stirring until vegetables are lightly wilted , remove from heat.
Boil water in a saucepan until boiling . Ramen flush with hot water until slightly decomposed , remove and drain .
Place the ramen in a serving bowl , pour the hot sauce with vegetables and meat . Sprinkle chives on top . Serve while hot .
